Here is the reading for tonight. If you prefer, you can skim the first half and concentrate mostly on the second half, which focuses on some case studies of healthful fast food start-ups. (It's actually more like first third/second two-thirds; the main part starts with the passage on Chipotle restaurants.)
Then post your review of the main points, commentary and questions to the blog, or write them up on paper and bring them to class.

ReplyDeleteAlthough junk food is still the best option in the US, with this (relatively) new options people can eat real food instead of fat!
I think this kind of options are the first steps to a whole new variety of "Good Fast Food", there is still a lot of challenges in term of price and access to this type of food and there's still a lot to do with education, because as Mr. Bittman pointed out, this kind of food is for the "health-aware side of the population", most of them with a good access to education (when he ironically saids "If you’re reading this article, you’re probably in it.")
I hope this going to be a trend, a small fight against that food it's not really feeding people at all!
